News – Brighton Food Festival Goes to Vancouver

One of the best elements of the Brighton & Hove Food and Drink Festival is the International Chef Exchange. And this year it is bigger than ever.

Late this month Head Chef at Terre Terre, Matty Bowling, will be representing our city in none other than Vancouver, at popular vegetarian restaurant The Parker. Matty will be taking his skill set alongside local produce including English sparkling wine from the local Ridgeview Estate and artisan gin from Blackdown Spirits.

Working alongside The Parker Head Chef Felix Zhou, Matty will be replicating the unique style of cooking that makes Terre Terre one of Brighton’s best vegetarian restaurants and creating a one-night-only special menu. In addition to this, Matty and the food festival team will be hosting a pop-up lunch at Street Food City the following day.

In return, Felix will be visiting Brighton as part of May’s Spring Harvest event and bringing a taste of Canada to our shores.

The International Chef Exchange’s main objective are to showcase quality produce to potential export markets, promote tourism and Brighton as a gastronomic destination. Matty’s trip will also be filmed for Latest Media.
